Salmon with Mint-Mustard Sauce
serves 4
Ingredients
- 4 ea salmon fillets
- 1 1/2 T Dijon mustard
- 1 1/2 T coarse grain Dijon
- 3 T white wine vinegar
- 1/2 C firmly packed fresh mint leaves
- 3/4 C olive oil
Instructions
- Blend the mustards, vinegar and mint leaves in a food processor, then continue blending while slowly adding the olive oil.
- Cook the salmon, plate, dress with the sauce, and serve.
